Losing or destroying official records of court proceedings is serious. Doing so intentionally is a felony is most jurisdictions.

And who prosecutes crimes which are done to protect the Prosecutors?

Especially when the State AG is politically involved with the Milwaukee AG and intent on protecting him instead of investigating or prosecuting?

The State AG would investigate, presumably. The AG is up for re-election next year. I don’t know about that race, but Cook Political Report just shifted the Wisconsin governor race from Likely D to Tossup. If he loses, I doubt the statute of limitations runs before the new AG takes office.
