Pig to human organ transplants were tried in the past, the first organ would last maybe a week tops, the second a few days, and soon the surgeon would report that the immune response was so dramatic that he could watch the organ starting to blacken and die the instant he connected the patient's blood supply.
Pigs have (IIRC) a glycoprotein on their cell surface that humans lack. It provokes a strong immune response.
Knock out the gene that produces that protein, and you're left with little greater a challenge than a human to human transplant, except there are a whole lot more pig organs available than Uyghurs...

My Mom had a pig’s valve put into her heart. The surgeons told her she should get 7-10 years out of it and instead, it lasted about 20. I asked her at the 15 year mark what she was doing to keep that little pig’s valve going and she told me she stopped eating pork. Dear Lord, I miss that woman so much!
