I guess it’s down to civil war style eating coming our way: hard tack, jerky, and weak coffee.

That is a fact. And with the current situation of power being unreliable it would be easy to lose it all if you stocked up and froze too much. Back on the ranch we used to butcher and jerk out whole Beefs, Burros, and Venison to get through. Canned quite a bit also.

We also used to be able to get “Range Beef” at a couple store chains. It was real lean and was better for jerking than feed lot Beef with all the fat. Wish range beef was more common than it is right now. Now is when very lean Beef could turn out to be real handy.
