I’ve never had a direct interaction with a line cook at a restaurant or bar. How does that scenario play out?
Usually they are in the back doing their job and I am in the front paying for their services....

Sounds about right. Zapata sounds like a good patriot, trying to push back on liberals in their town (in the State of Jefferson in upper California). I've enjoyed many trips to Redding and Shasta City, decent conservative folks there. 180 degrees opposite of the liberal SF Bay Area hundreds of miles south.
Google him. He made an awesome speech at his county seat. Just let know what the deal is. He definitely has a set of brass ones.
