That’s a standard method of restraining a suspect who is not being cooperative - as the PROSECUTION witness testified.

To counter the prosecution’s suggestions to the jury that Chauvin’s use-of-force could no longer be justified once Floyd was handcuffed and prone, Nelson asked Stiger if a suspect in handcuffs can still be a threat? Yes, answered Stiger. They can bite, kick, run. Yes.
They can get the officer’s weapon? Yes. Even if handcuffed. Yes.
The notion that a handcuffed suspect is no longer a threat is not correct, a handcuffed suspect can continue to present a risk? Yes, answered Stiger.

He had severe atherosclerosis, heart disease and was loaded the F up on stimulants.
Knee on the back/shoulder even on a cuffed person is standard procedure across the nation, especially a 6’+ 230lb man on drugs.
Apparently you didn’t read the posted article. The prosecution’s own expert witness on use of force testified that a handcuffed person is still a threat. They can run. They can grab an officer’s gun. They can kick, bite, spit and fight. Floyd was by far the largest and heaviest person in that scrum. The initial officers on the scene tried to get him in the car and Floyd resisted. Chauvin’s knee was not even on Floyd’s neck. Floyd had a 3-times lethal dose of fentanyl in his system. Having ingested that much fentanyl plus other drugs, Floyd would have died no matter what else happened to him that day. But you go right ahead and stupidly believe the lie.
Officer Chauvin followed procedure, a procedure to this day that has not been changed. If you're asking Officer Chauvin to break procedure, let him break the procedure of arresting violent drug offenders and instead bring them to your house.
