The fat content of the meat used is relevant to the lasting in the freezer. 80/20 is best for long term freezing. Cook, slice, cool slices in fridge then vacuum seal. The fat coating on the slices though not really visible will resist freezer burn for more than a year in my deep freeze. I use Ziploc sandwich bags and a reversed BP hand ball pump to evacuate the air from the sandwich bags and quick seal the insert hole.

Instead of Sure- Jel try Pomona’s Universal Pectin.

You can buy larger quantities and it has two wonderful advantages.

One is that you can make the jam with any amount of sugar you desire.

And better yet , you can make large batches and they set beautifully. I would make enough for seven pints, a full cannerload, at one time. I would make a years supply of each fruit jam in one day of processing.

That would be 35 pints.

I would do the prep, jar washing, lid washing, setting up the kitchen the day before. Made life a lot easier.

Canning day was also leftover day.

I use jars like that for storing rice, popcorn, pasta, salt, etc.

a ‘just in case the power goes down’ idea is to buy frozen mixed veggies, thaw and cook in large jars (I use the five bean salad jars from Sam’s Club), reusing the lids tonged from noiling water to top the bubbling veggie mix. I have yet to have even one of the jars yield that familiar ‘pop’ when cooling. Only able to do three jars at a time, but it works.

Anyone who has not been putting supplies away since December 2019(or before) until now AND continuing to do so is asleep and watches mainstream media.

What is a BP hand ball pump and how do you attache it to a ziplock sandwich bag?

That’s what I do-mix it up warm. After bubbles stop add 3 ice cubes stir and drink. I can do it. Hubby-not so much.

Thanks so much - I think you may have solved my problem. Since our grand daughter has elected on line school, this year, we don’t drive our 2010 Odyssey daily anymore. This is the 3rd time it’s been totally dead.

The solar battery charger, I assume will also not overcharge since it’s not that great an output? Is that correct.

The dam is now and always has been safe. Media sold adds by enticing the gullible to believe the dam was failing.

The Hydrologists on the Yangtze controlled more than a hundred other dams to mitigate the flooding as best they could.

I have to stock a lot of paprika, because I use a lot when making Chili. I have huge recipe for 10 lb. which is cooked in the oven. Cooled, sliced and frozen for a quick meal just heat with a can of chili beans.

Nice!

I have 7 hens, but 2 of them are old enough they don’t lay very often. I’d love to be able to keep a rooster so I could grow my own replacement hens.

For a while this summer, we were the only ones in the neighborhood with access to eggs. All the stores were sold out.

In my area - food shortages are being 'masked' by our grocery stores... they spread things out and offer products (for instance say canned tomatoes) but NOT in all brands. You can buy the product, just not always in the brand you want.. I've come to respect our local Publix... an amazing grocery store in pandemic/broken supply chains ... times.

That said the real problem we're having in my area is a lack of new refrigerators and kitchen stoves. If you try to buy a fridge it won't be delivered until next year - and that not a 'for sure'...
