SARS-1, which I believe showed up in 2003, was a severe common cold virus.

SARS-1 disappeared completely after one year.

It is simple evolution and similar changes have been seen before. When the virus kills you it also means all the virus load dies as well. A virus that keeps you alive, lives on to spread to others. So natural selection prefers the virus that does not kill.
