My wife does that with our Thanksgiving Turkey!
If there any left overs, they are gone by the end of the day.
I use the turkey giblets PLUS I buy a pack of chicken gizzards and livers, cook them with the turkey giblets in a pressure cooker, then reserve the liquid, chop them up fine and add celery, onion, black pepper, sage and browned flour, and it makes a meal all by itself!...............
