Say what you will about Orban he may not be much for subtlety but he never really leaves you guessing as to where he stands.”

They remember their history, and know what it’s like to lose their countries to hostile invaders. Having just gotten them back they are not so eager to lose them again.

I've seen a lot of supposed Hungarian recipes on line and for the most part...they're GARBAGE!
My recipes are at least 8 generations old and both boys and girls are taught them, from the time they are small, in my family, so that we can hand then down to future generations and so they don't die out. :-)

For starters, nobody, and I do mean NOBODY in my family, any Hungarian/descendants of Hungarians I have ever known and most assuredly, NOT A SINGLE Hungarian restaurant I have ever eaten in, leaves the pits in the cherries! If this was "normal", then just WHY did my grandmother still use her grandmother's cherry pitter? LOL
Also, NO wine; never, ever, not one drop is in this soup!
For dessert...with whipped cream ? NO WAY !
Cloves and cinnamon? ROTFLMSO
This is a really simple soup to make :
2 1/2 LBS of cherries...PITTED
2 tbs ( or a bit more...we don't really measure much ) sugar
1 slice of lemon, with the seeds removed
2 teaspoons cornstarch (you can also use arrowroot instead)
3 tbs sour cream
1 1/2 cups of cold water
Place the sugar, water, cherries, and the slice of lemon in a pot and simmer until the cherries are soft. ( maybe 10p minutes or a bit more )
Remove p0ot from the heat.
Mix the the cornstarch or arrowroot in a small dish, with the sour cream and when the mixture is smooth, add to the hot cherries and liquid in the pot.
Put the pot back on a low flame, stirring with a wooden spoon until the mixture is smooth/becomes one and the soup has thickened.
Remove the pot from the heat, allow to cool, then chill.
Taste before serving and add more sugar and/or lemon juice, when needed.
Serve in chilled bowls and you can add a dollop of sour cream, if you care to.

HUNGARIAN CHILLED CHERRY SOUP (MEGGYLEVES)
A Hungarian dessert disguised as a soup. Frozen bing cherries can substitute for fresh sour cherries.
Morello cherries in light syrup, like the one's sold at Trader Joe's stores, are ideal.
ING 2 (24-oz.) jars of pitted sour cherries (preferably morellos), with their juice (Alternatively, you may
use 1 3⁄4 lbs. fresh bing cherries, 4 cups sour or regular cherry juice;2 tsp. kosher salt 1 stick cinnamon
2" thick slice lemon 8-oz container sour cream Instructions
METHOD Add cherries w/ juices, to a 4-quart saucepan. Add salt, cinnamon stick, and lemon.
Bring to a boil, reduce heat to medium-low, and simmer until cherries are soft, about 5 minutes.
In a small bowl, whisk together sour cream and 4 cup of hot cherry liquid from pan.
Remove pan from heat; stir in sour cream mixture. Chill the dessert soup.
SERVE 4-6.
