Weren’t rabbinic students specifically forbidden to study Genesis 1 until they reached a certain level of theological mastery? Have you reached that level? Are you even qualified to, as a Noahide?
You don’t get to define Genesis 1, ZC. Period, end of story. You don’t get to do it either way—as a liberalizing mythologizer or as a rigid literalist.
The text is God’s, and it means what God says it means, not what you or I say it means.
Now to what degree that is historical or not—and I am definitely on the side of historicism myself against liberal Catholics—I am willing to heed Him in the matter, and His Church as Mater et Magistra. Not you.
