NC pork barbecue has a sweet and sour thing going on to achieve an overall balance, eastern sauce is tangy and a little vinegar sour so creamy sweet coleslaw is served with it, or on a sandwich. Lexington sauce isn’t sour it’s tomato based so the sweetness of the pork shines through, the “red slaw” has the heat and the tang to balance it. The red slaw works with either pork or chicken and is one of those simple things that are tough to get just right. All Recipes has a pretty good one, the only one I’ve made that tastes “right” to me. I’ve been known to put just a little horseradish in with it to give it more kick and once put a little diced pickled ginger in there to give it a sort of asian kick and that worked out well, too.

That is what’s so beautiful about BBQ. While it can be compartmentalized into Texas vs. Memphis vs. Kansas City vs. Carolina style, there are a thousand nuances to each which can paint the palate. The same as wood smoking, which so much goes hand in hand. Dry vs. wet? Hickory? Mesquite? Applewood? Cherry? Oak? BBQ is truly a culinary art form unto itself. And it’s an art that I love to dabble in. God bless barbecue and the beer that compliments it. While I’m at it, God bless family and America, too.
