I am not sure about that but I know the reason people were told to be careful to cook pork to well done in the U.S. years ago was mostly due to trichinosis. The reason people also were careful to get chicken well done was due mostly to salmonella. The lack of parasite care for animals, and poor refrigeration, people not knowing how to properly handle meat all made the odds pretty high if you ate pork or chicken that was not well done you were likely to get sick. Medical care was not as advanced years ago, if you got trichinosis or salmonella you would likely die.
Beef is safer in general. Beef does not normally have the same issues and people did not normally get deadly illness from eating beef. By the time beef would hurt you it was visibly spoiled, and the odor would keep most from even trying to eat it. That is why it has always been common to eat beef that is not as well done. With beef though you still have to be careful with ground beef. The grinding process can allow things to contaminate the meat. Effective grinders are usually hard to clean so not always cleaned properly even in a commercial process. My mother would not buy ground beef, she ground her own fresh right before cooking it and still would not cook hamburgers any way but well done. I still don’t eat burgers that are not well done. We always treated ground beef with the same extra care and cooking as pork and chicken.

I think I like the Pittsburgh style then. Get a crust on the outside. Medium rare on the inside. Perfectly seasoned with herbs and kosher salt. I guess I’m like Colonel Kilgore. I like it rare but not cold.
Agreed. I started with ketchup, moved along with A-1 and now have it with just a little salt, pepper and butter. Rare. Most people having changing tastes as they age. Babies and children tend to like bland food. The more we try different foods, the more we expand our palates.
