A Carl's Jr. owner was banned from his own kitchen after being caught on camera

Jack Webb, the co-franchisee of a Carl's Jr. in Alberta, Canada, was discovered to have committed multiple food safety violations while being filmed by in-store security cameras, CBC reported.

The first clip of 10 shared with CBC shows Webb almost elbow-deep in barbecue sauce. Webb is mixing the sauce with his bare hands, a clear violation of food safety measures, going so far as to refuse a spoon when a worker offers it to him.

Other clips show Webb mixing sauces and scooping them from one container to another with his bare hands. In one case, he uses a spatula that he pulls from a dirty dish pile and quickly wipes on a towel.

Webb was also caught on camera picking up a chicken tender that fell on the floor, putting it in the warming tray amongst the other freshly fried tenders. He additionally risked cross-contamination when he transferred chicken to the fryer without washing his hands after handling raw chicken.

It’s probably the dermis cells that give the sauce that “something special” taste.

I’ll tell you what, in visiting Alberta, Canada last summer, I was not impressed at all with the standards at fast food establishments. We went into a Tim Hortons to grab some breakfast, and it was the filthiest restaurant I’ve ever been in. There was trash scattered all around the floor of the dining area, with no evidence that there was any intention on the part of anyone to clean it up. The bathrooms were beyond disgusting.

I tend to be one of those that decry excessive governmental regulations, but it seems to me that Canada could maybe spend less time trying to regulate their citizens’ speech, and more time ensuring public safety through food handling and sanitation in public restaurants.

Carl’s JR has pretty high standards; this guy is an example of the pervasiveness of abject stupidity.

Two things.

There are regulations already.

Where in Alberta where were you? Sounds like a third world city.

Here in Grande Prairie, we may be a farming /oil and gas town but us vet electricians keep everyone in line heh.

I think it was in Jasper where we went into that Tim Hortons. Lots of hipsters and old burned out hippie looking people everywhere. Lots of vagrant types that travel around with their back packs. And that Tim Hortons was not the only place that seemed trashy.

I think a bath in a 375° vat of oil will take care of any "cross contamination".

I haven’t been back to a Whataburger since seeing the burger flipper digging deep down in the backside of his pants. Haven’t been to the Marble Falls, TX Sonic since a car hop brought my food in her filthy hands and her underside nails were black with dirt.

There more than one reason I’d rather not eat out.

Thanks for pointing out the obvious lack of knowledge of the writer. As a fast-food alumnus in chicken-frying, I can say I did exactly the same thing with bare hands multiple times a day. Our chicken recipe was a double-dip in the breading mix with a trip through a buttermilk solution in between the breading then about 15 minutes in the hot oil.

This point could be a case of bad writing; perhaps he was transferring chicken FROM the fryer to the "cooked and waiting to be served" bin?

Just a guess on my part in the context of all the other stupid arrogant reckless conduct on this guy's part.

You know the type, he was thinking he was saving a penny here or there when he used a dirty utensil or his own hands (GROSS!) or whatever. "No, it costs money to run the dishwasher, see, I'll use this dirty spatula but I'll wipe it off on my pants first and everything will be fine."

Sorry folks.
The “Sanitary Hats” and “Plastic Gloves” you see every time a video shows smiling employees and correct procedure is BS.

In restaurant kitchens, you wash your hands, then you mix with your hands.
That’s how it’s done.

Don’t like it? Cook your own food. (Oh yeah, like YOU wear gloves making dinner for the family . . .)

Watch any cooking show. NONE use gloves or those stupid hats.

A Chef’s Tocque is very different, a symbol of authority and respect.
That’s The Boss.
