Unfortunately many recipes call for a microwave, but some put the scrambled egg mixture in a muffin tin to bake in the oven for 20-25 minutes. Hubby wouldn’t wait that long. ;-)

Just now tried a variation...no peppers (didn't have any).

I nuked the sausage first, on a small plate, then mixed that with beaten egg and cheese in a coffee cup.

It wanted to crawl out the top of the cup, solid parts rising, less solid/more liquid parts sinking -- while producing steam that lifted the cooked parts? Is that why it kept rising?

Had to stop a couple of times and stir it up.

Think I may stick with the iron skillets.

My grandpa hated microwaves and used to claim they created cockroaches. Don’t understand that reasoning but whatever excuse not to use one.

A scramble egg muffin is a great way to use up little bits of any sort of leftovers. Super grab and go breakfast or snack.
