I always thought it was like escargot. The butter added a sweet taste to it to offset the meat’s powerful taste that is stronger than crab or shrimp. Come to think of it, lobsters eat crab, clams, starfish, and sometimes other lobsters. So they probably carry all the different tastes. Butter is that added attraction.
