This is Pennsylvania’s official recipe for Food Loaf, aka Nutraloaf. Inmates typically eat 4oz. slivers with their hands, utensils are not provided and might eat nothing but this for as long as one week. While Pennsylvania’s recipe is clearly intended to be as bland as possible, some states, prepare recipes with garlic powder or other intentionally off-putting flavors.

Recipe courtesy of the Pennsylvania Department of Corrections:

Recipe makes 21 servings.

10 ½ cups reduced fat milk, 2%
26 ¼ cups white rice, cooked
5 ¼ cups potatoes, grated raw, flesh and skin
5 ¼ carrots, grated
5 ¼ cabbage, shredded
15 ¾ cups oatmeal, dry
15 ¾ cups garbanzo beans, with liquid, mashed
1 ½ cups margarine

Preheat oven to 350 degrees. Combine all ingredients thoroughly in mixing bowl. Place paper liners in loaf pans, scale 29-30 oz. of batter into lined loaf pan. Bake for one hour and 15 minutes. Place on wire rack and cool thoroughly.

I am going to print this out. Thanks!

We have a vegetarian night every week since the above-mentioned heart attack (my husband). This might be very good!

thanks!
it sounds more balanced nutrionally ...and more tasty...than the only thing I’ve ever found that can let me lose any weight (raw tofu)

ha!
i might try it...might even toss in a little tofu for good effect and added protein value, eh? it really doesn’t sound too terrible, and as you indicate maybe might even taste pretty good with a little something on it?

yum yum yum!

thanks!

Uh, garlic powder is 'off-putting'? Is there something in PA water that kills taste buds? I hope not cuz that's where my Deep Park is bottled...

Ok way too much rice. 20 cups max, 1/2 white and 1/2 brown. Brown forms a slightly stronger gluten to help hold the roll together.

Make up the 6 remaining cups with a blend of seasoned soy crumbles or a dark bean - kidney or black, and some onion. And the seasoning - could go so many directions with the same base ingredients - savory, or hot, or even bbq...

Also long-chain margarine? Why? At Sysco [PDF] they could get a HDL-ish soy-based shortening for about the same. Why should food-as-punishment raise my tax rates for inmates having heart attacks because of unneeded heavily saturated trans fats in a freaking vegetable dish? Hell, if you're going to do that just serve rat poison.

Yeah, you know if you're going to f with a man's food, don't serve a half-assed vegetarian roll, just serve gruel as the stick. And maybe use an improved vegetarian roll as the carrot.
