I have eggplants (morden mini variety) in extra large drink cups in my unheated garage right now.
Under plant lights.
First, you would have to define “grow” LOL
I have tried several times, and have managed to get a mature plant or two as much as 18-24” tall, with a few goose egg sized fruits. Unfortunately, they were Black Beauty, so should have been the size of an ostrich egg.
Like banana squash, melons, pole limas, okra, and a few others, we just don’t have the season length & heat for it. Wish I could help.

I get it. Saute the squash in salt, pepper, and butter. When the squash is done, feed it to the pigs and eat the butter.

I’ve been harvesting fresh salad tomatoes for the past 2 months from cold season tomatoes I’ve got planted in the large drink cups.
My raised bed is full of lettuce and greens so we’ve hit the salad trifecta. Fresh greens AND fresh tomatoes at the same time.

Varieties ‘Glacier’ and ‘Sub Arctic Plenty’.
Feeding them with the liquid food called ‘Texas Tomato Food’.
Hubby has decided we should do this every year.
I’ve got ‘Early Jalapeno’ plants that are making the occasional fresh jalapeno too. If those survive till early May I’ll probably just transplant them outdoors at that point.
I started all this stuff the middle of August or so and just brought it in when we had our first frost.
So wonderful. I like the old English /early colonial polite form of address for gals like you, “Goodwife”.
...Brown sugar and cinnamon, too. If it’s the right squash.
I have grown them occasionally, the last time was about 3 years ago. I did experience insect damage, I did not get many. I sometimes use spinosad (Captain Jacks bug spray.)
I have not tried it, but someone suggested using coffee grounds. (Sprinkle on the leaves!) You might look at the suggestions here:

I have sprayed parasitic nematodes on my garden and lawn. I know that they worked on Grubs. I would be digging and find a grub that was yellow or brown and melting away.
Wonder if they would work here at FR....
