You are very right! We eat that way.
Our granddaughter started having a lot of ailments, including digestion troubles, infections, etc., when she moved out at age 18. She blamed it on her job as a hairdresser. She was eating at fast “food” places almost exclusively and drinking only soda and almond “milk”. She was putting on weight, though she was listening to the dogma of non- or low-fat and phony sugars as the “cure”. My daughter and I warned her if she stayed on her course, she would end up obese and sickly. One needs real food and fats, along with lots of good proteins, to be healthy.
Today, she had emergency gallbladder removal surgery at age 19. The surgeon said it was her diet. It does not take long to destroy one’s digestive system. When the digestive system goes wonky, so does the rest of the systems, like a row of dominos.
She will HAVE to eat a very low carb, high protein and real fats diet. That means no grains, (like cookies, cakes, bread...), soda, etc. Paleo-like diet will be her lifestyle, or, if she eats the American idiot medical recommendation of diet, end up with immediate evacuation of her bowels after every meal. Even the recommendated drugs will not stop it, though it enriches the drug companies.
Poor kid. She thought mom and Nana were food nazis and wrong. Now, she will have a lifetime of no goodies. At least she can have bacon and eggs, but without the biscuits and gravy. Okay, gravy on the fried-in-coconut oil/butter ‘tators.
She will have to finally put down her phone and learn to cook.
Considering almost every “study” is funded or done with a agenda in mind...they are pretty much worthless...
How did human beings survive for at least thousands of years without government food studies to know what not to eat...
Stop eating processed crap...eat natural foods that grow either on the hoof or on the ground,vine or branch...
And ironically potatoes have more of a range of nutrients.

Soy should be avoided.
My suggestion re never eat processed foods would probably eliminate 99.99% of the soy.
We use Avocado oil if the heat might get too high.
We have tried the coconut oil and to us, it lacked the flavor we wanted.
Some of our friends have gone to my semi paleo / minimal carb eating plans and use EVCO and love it.
Often for a snack or a side to a lunch, I will fix a bowl of Kale and Chard with walnuts, bacon bits and EVO over the mix.
My wife is known as the Salad Queen with our friends and family. They all want one of her salads. When we host or join a coop meal, she fixes incredible salads and makes her own salad dressing with EVO and sometimes EVCO. A favorite is her mixed kale salad, with baked beets and a salad dressing with butter milk and EVO.
Hopefully your grand daughter will wake up and smell the good food not the crap she has been eating.

One of the advantages of the basic Paleo life style is the minimal sides one needs. You have your meat/fish or chicken, a good salad and a side of green veggies or mixed veggies. This makes cooking simple.
In the early spring, late fall and winter, my wife uses our convection oven to prepare a one pan/tray dinner in her convection oven. She puts parchment paper in the cooking pan/tray and arranges the meat/fish or chicken on the parchment paper and the green veggies or mixed veggies on the other side of the pan or around the meat. She EVOs the uncooked meal and seasons it and pops into the convection oven for about 30 to 40 minutes. While it is cooking, she makes a salad. Then, we have a great dinner, one pan to clean (minimal cleaning when you use parchment paper).
The rest of the year I charcoal basically the same dinners outside on our grill. Again, we have no pan nor pot to clean. While I’m grilling the protein and veggies, my wife makes a salad. She puts her salad serving on her plate with her share of grilled dinner, and I use the salad bowl when I eat her salads after my main dinner. Again, minimal cleaning and minimal prep.
Total prep time before either dinner is about 5 to 10 minutes and cleanup after dinner about 3-5 minutes.
We love leftovers and will often cook/grill enough to have left overs for lunch or dinner the next day. Total prep and nuking time in microwave 3-5 minutes. Nuke your meal on your lunch or dinner plate for minimal clean up. We use paper plates for lunch and normal dinner plates for dinner.

About twenty years ago I got to attend a symposium at Stanford on re the dangers of inflammation to pur bodies re accidents, surgery and just living.
The main cause of death in my family on both sides for males has been strokes.
I discussed this with one of their Cardiologists and Neurologists at a lunch. Both of them recommended taking entaric coated baby aspirin and with my family history taking one in the morning and one in the evening after my evening meal.
I have done that for years, and I will continue doing that.
Unfortunately at that time the killer American Diet was being touted re low fat and high carbs. Since, then we have found that to be a killer instead of a savior diet.
In the past year I kicked the so called recommended diet, reversed the pyramid and feel better than I have for decades.
Avoid all processed foods. Read the labels and don’t eat when a massive amount of added un natural ingredients have been added.
I am one of those people that spends far too much time in the store reading labels, and you are spot on. Soy is in EVERYTHING that is processed. Do you know how hard it is to simply buy a loaf of bread that doesn't have soybean squeezin's in it? I mean... EVERYTHING has it.
I am surprised that bottled water doesn't have it... though they probably spray it on the injection molds that form the plastic bottles the water comes in.
Also, file under truth in advertising: "AUTOLYZED YEAST EXTRACT"... this is the way they (with FDA approval) get around the MSG label... I see products that say "CONTAINS NO ADDED MSG"... but the ingredient list has the rather innocuous "yeast extract" ingredient.
"Autolyzed yeast extract" is essentially MSG.

Sounds great. You definitely know your stuff about how to eat healthy. I am afraid I am a bit of a backslider but I at least know better. I recently returned to SC where I grew up. I am struggling with fried foods. Never touched them in Pittsburgh, but eat way too many down here.
Probably the biggest danger of fried foods is the combo of stuff that coats what is fried. Most of these combos contain wheat, gluten, wheat by products and only God knows what else.
There is a spice mix called Dukkah. You can make this great mix yourself using this recipe link. Foods baked with this spice mix and EVO taste like fried foods with zero carbs besides what is in the hazelnuts.
You can saute food coated with this mixture with EVO or Avocado Oil in a fry pan. You can use some sliced pepper bacon in the saute pan with the oil, to kick up the fried food taste. Use a non stick spatula to gently turn the seasoned protein.

We buy all of the spices in the Hispanic food/spice section in small packages that don’t go out of date at very low costs. The hazelnuts come from Whole foods, the only source we can find out here.
My wife and I do a lunch at a fast food once a month to feed our withdrawal. If we want chicken, we go to Popeyes. For fish we get the grilled cod sandwich at Carl’s Jrs and share an order of fried sweet potato fries and only eat the bottom half of the bun. The last time, our local Carl’s only had a fried cod. I popped up 2+ pounds for a couple of days and my wife gained over a pound from the coating.
