I used to work at a Summer retreat which had a bunch of Japanese Students for around half the Summer.

Just before they left we would have a “Japanese” night. The girls would prepare Japanese meal and the guys would arrange entertainment.

The entertainment was a combination of great and awful. The meal was mostly great but with one awful dish. The rice balls were delicious and my favorite was pieces of chicken cooked over a fire. The chicken pieces were skewered on sticks which you used to hold the chicken while you ate it.

On the other hand, they made some kind of seaweed dish which was so bad that I noticed the American kids backing up to trash cans and surreptitiously dropping it into the trash.

The chicken on a bamboo stick is “Yakitori”, literally roast bird. Great snack food and the key is the marinade, basically soy sauce, honey, and sake in equal proportions. Boneless chicken thigh meat works best as it has more flavor and won’t dry out like breast meat. I sometimes grill a bunch over charcoal along with Korean bulgogi marinade beef strips on sticks. Little pieces of onion, split garlic cloves, and fresh ginger in between the pieces of meat make them like miniature Asian shish kebabs.
