Here's what I think the problem is....over processed gluten sources. The gluten in 100% whole grain wheat or other grains is fine and it's healthy. The body digests it no problem. But with the processing that's done, some systems can't properly digest the glop that's passed off as food. Another problem is added "gluten" as an ingredient. It messes up the balance of the food. It's a cute trick the food manufacturers use to up the protein content which was destroyed in processing.
What I find hilarious is people who will insist on "gluten free" meals and then eat a donut as a snack.

I was going to try eliminating gluten from my diet till I had my first sandwich made from gluten free bread........After taking my first bite, I quickly switched to cardboard.
