My company cafeteria makes no effort to have gluten or dairy free choices. I'm on my own to figure that out. Packaged soft drinks are safe. Bananas are OK. Occasionally some rice. Most of the rest of the offerings are contaminated with wheat or milk. I bring my own lunch most of the time. Chili's has a great Caribbean salad with grilled chicken. Remove the chopped red bell pepper bits and it is a great gluten free salad. They get my business most evenings. I had to give up on the grilled chicken Mexican caesar salad at El Torito's. My lungs are gurgling before I can finish the salad. Too bad. It is very tasty.

I don't force my problems on my food suppliers. The suppliers that provide what I like without making me sick get repeat business. The others lose out.

I am not going to bother you about your gluten but how the heck was European civilization built on bread as “the staff of life”? How did our ancestors eat bread without any ill effect for a few thousand years? My theory is certain people have a problem with wheat and gluten not due to gluten but due to other things going on that our ancestors did not have. And that we don’t have either if we do certain things
