Latino immigrant mothers, especially those who live in rural areas and subsist on low incomes, face "serious challenges" to preparing nutritious meals, according to a new study.
The study, published this week in the Family and Consumer Sciences Research Journal, says that Hispanic mothers have problems when they want to serve healthy, nourishing food to their youngsters as they confront "new food environments."
The research was carried out by Kimberly Greder, PhD, of the Department of Human Development and Family Studies at Iowa State University, together with Flor Romero de Slowing and Kimberly Doudna, also of ISU.

Talk about adjustments; you should have seen me in the basic training mess hall.
Beans, rice and plantains and tortillas is beans, rice, plantains and tortillas. What could be the big problem? Its in every grocery store.
In all of the grocery stores around here, Central California Coast, more of the clerks and such speak Spanish than speak English. All of the signs, labels, prices, ads are in Spanish. If you want to work at the local welfare office you have to be bilingual. Don’t see the problem for them although I have a few.
Not only did they "need" to do a study, that we taxpayers funded...they will develop a government run solution, that we, again, will fund.
Those same professionals, the researchers say, should work with schools and other organizations to make sure children have access to adequate meals and should take the lead in "identifying strategies to maintain healthy cultural food traditions."
Naturally there has to be a big government solution to this problem (if there is a problem).
If they came from a food desert they’re all set. LOL
I hate to sound off like this ,but if they stayed in their formally familiar environment,they wouldn’t have a problem,now would they?

Really; if they’re in rural areas they aren’t in “food deserts”. They might create their own “neglecting anchor babies” deserts, but that’s about it. I was under the impression that urban Hispanics were in much worse shape (pardon the pun) than their rural counterparts; those little porkers LOVE fast food (then go home and eat meals to sustain farmhands before they ooze onto the couch and watch TV).
Most immigrant groups have faced the problem of Unfamiliar Food—and solved it. But rice? Beans? My groceries are full of many different brands of tortillas! Someone is whining with some kind of agenda...
My ancestors brought a lot of their familiar foods with them or adapted what was here to more familiar forms.
If there’s one thing I love about multiculturalism its the food.
These people don’t know how to grow vegetables? But they came from rural areas where what you grew was what you ate?
Yep, another created crisis that only government employed (union) bureaucrats can solve!

If they didn’t I wonder why the H did they come here?
Either way why should anyone care enough to study the fact? It is hardly news and it has been a fact of life for low skilled immigrants everywhere forever. It didn’t take a study to find out something that has been common knowledge for centuries.
And guess what every small rural community I know of has a food bank. Problem solved and I didn’t have a government grant.
I’m sorry.I’ll work harder to provide better food choices!
