In April research firm IBISWorld declared manufacturing of the spicy condiment to be one of the 10 fastest-growing industries in the U.S., with average company revenue jumping 9.3 percent per year over the last decade.
Even though the segment is smallroughly 5,500 people employed by 218 sauce companies, an industry valued at $1 billionit packs an entrepreneurial punch.

WRONG!! Once, on a bet, I scarfed down 3 fresh, raw, habeneros. I won the bet, but within an hour I felt like a rabid bobcat was trying to claw it's way out of my stomach. I had to leave work and go home. Did I take a couple of months of grief was that? Yes, I did. But, of course, my misery wasn't over, as the stuff worked its way through me. The climax was quite agonizing. A word of advice. Don't try this. But if you do, have something in your stomach first. It might help.

Try Texas Pete sometime. Pepper sauce is God’s little gift.

I can tell that I've "blown myself up" when my sinus/nasal passages swell up...like a cold. It goes away in about 20 minutes.
It usually happens with the curries.
Sometimes I like Franks original, or chipotle flavor, but Louisiana hot sauce remains my overall favorite. You can’t go wrong with Tabasco of course.
After years of excessive use to make field rations palatable, I’m burned out on Tabasco (pun intended).
It’s good stuff.
I just read that Sriracha sauce is available at Publix which means I can get it FREE! Will definitely check it out but what foods are best to put Sriracha on?
And to top all that, habenaeros have lousy flavor.

Sriracha is beloved by many for Asian food -- and for lots of other things, too. I like it, too, but far and away, my favorite Asian hot sauce nowadays is Sambal Oelek ground "fresh" chili paste. Hot, yes, but full of fantastic flavors as well and available in most supermarkets here on the left coast.
Then there's the million billion trillion Scoville stuff. Nuts if you ask me. Wouldn't touch it with a ten foot pole. Scares me. Drather handle rattlesnakes.
