How do they know for certain that the rocks came from Mars? Consensus. This would be an example of the now common methodology in science, i.e., everyone agrees to agree on something that is unsupportable with the facts, so that they can move on to the next hypothesis.

We have sent mass spectrometers to the mars surface, and know it's compositional characteristics very well.

The gas trapped inside cavities inside the rock match precisely the sampled atmosphere on Mars. We’ve had landers on Mars since 1976 or so and we’ve got a pretty good idea what it’s made of and the trace elements in the atmosphere.
