I just looked that up.
I think we call those Cornflowers. Have you ever heard of that?

I have heard of corn flowers, but the pictures I have seen, do no look like the chicory that I am thinking of. This plant has a flower at the end of the stalk, but chicory has small blue flowers along the stem, and is often found up and down the banks at the side of the roads. It is a weed in Missouri, but you can order seeds from some of the catalogs.

I first tasted coffee with chicory when we went to New Orleans, and I liked it very much. It was used during the civil war to stretch the coffee.

Since we have some growing between the road and the house, I thought it would be worth making some of my own, but I haven't finished researching how to yet.
