They are going to lose in court - the law is blatantly and shockingly unconstitutional but the courts will not do their job to protect the innkeepers. I would suggest that they capitulate, agree to take the wedding, and warn the “customers” that the gay mafia is imposing their will by force on an unwilling business. If the lesbians insist, then the couple deserves what they get - exactly the service that forced servitude (slavery) deserves. I would comply with the letter of the law, not with good grace or good service, but just barely above the threshold that would be actionable in court. “Oh, dear, it’s a shame our staff are under the weather on the day of your wedding, but working together so closely, it’s no surprise when we get sick together and either can’t make it or the few who can are moving so slowly.” I would also check the contract VERY carefully and make sure it spelled out damage limitations in case of inadequate facilities or service.

This is, however, not morally a contract if one party is forced to accede to terms that violate their God-given and First Amendment protected fundamental human rights. The innkeeper’s only moral obligations are to God, country, family, and community, not to these outside bullies. If the lesbians are dissatisfied with the service, that is no different from a rapist complaining that the victim wasn’t enthusiastic enough. In general, homosexuality is merely sinful, a crime against God and self. This couple has taken it to a whole new level, crossing that threshold to genuine evil.
