A plug for the good professor Reed's book. Although a social commentator and scholar at Chapel Hill he is very conservative in nature. He and his wife know their barbeque.

METHOD Chop red hot chile pepper. Add to capped jar w/ 2 c apple
cider vinegar, 3 crushed peppercorns, 2 tsp salt; shake well. Steep overnight

Keeps well outside fridge; shake regularly.
