The delay while the digital hithes himself before the shutter trips, lead be to think a balk and would make it unsuitable for action shots. Also do tthey make a digital back for some mid-size real camera?

Sure do. But not for action photograpy. And they run from $10K for a back up to $30K+ for an entire camera.
