British shoppers are to be banned from buying eggs by the dozen under new regulations approved by the European Parliament. For the first time, eggs and other products such as oranges and bread rolls will be sold by weight instead of by the number contained in a packet. Until now, Britain has been exempt from EU regulations that forbid the selling of goods by number. But last week MEPs voted to end Britains deal despite objections from UK members. The new rules will mean that instead of packaging telling shoppers a box contains six eggs, it will show the weight in grams of the eggs inside, for example 372g. Or that a bag of white rolls has 322g inside instead of half a dozen. The rules will not allow both the weight and the quantity to be displayed. Last night, Britains Food Standards Agency said it was opposed to the move, putting the UK on a potential collision course with Brussels. It could be the first test of David Camerons pre-Election promise to stand up for Britains interests in the EU. Eggs have traditionally been sold by the dozen or half-dozen, because the old imperial measurements such as inches or pennies were calculated in groups of 12. Early in the 20th Century, eggs were sold from trays on shop counters and carried home in paper bags. But between the two world wars, it was discovered that eggs kept longer if they were left standing on their ends, so the cartons of 12 and six were developed. Last night, an FSA spokeswoman said: This proposal would disallow selling by numbers. Retailers would not be allowed to put Six eggs on the front of the box. If it was a bag of rolls, it would say 500g instead of six rolls.

When I studied chemistry in college, we almost always used mass (weight) based formulations. They are more accurate.
Did I ask for a law? Um... No. Eggs, however, are smaller than they used to be. While I’m at it, I’ve noticed that there are a whole lot more spots inside the eggs than there used to be.
I would like to see the egg producers set some standards so I know what I’m getting. I thought they had some, but that doesn’t seem to be the case. Obviously, I can’t weigh and candle my eggs at the store. You seem to suggest that I carry a scale at the store. That’s a dumb idea. I like the idea of having weight included on the box of eggs. That would allow me to make to an informed choice with little or no cost. Standards for what is inside the egg can have two sources, either industry or government. I prefer an industry that polices its own standards.
I may have to use that as a tagline! Brilliant! (and funny!)

If you want standards, just buy USDA rated eggs. That pretty much guarantees you’ll get what it says. Non-USDA eggs are up to the judgment of the individual producers and your personal descretion...magritte

The best bakers I know always measure by weight. Everyone agrees that their baked goods turn out much better.
A digital gram scale is relatively inexpensive in any shop. Most will weigh both grams and ounces.
The other tip for cooking and baking success is to first prepare all the ingredients, measured, if needed, or at least prepared (diced/sliced/chopped etc) as directed. Place them in separate bowls to be added as necessary during the process. It will make a noticeable difference in outcome and many who say they cannot cook or bake will be delighted that now they can do so with excellent results.
It takes a bit more time at the beginning, but will save time in the combining. Use the cooking time to clean up. You can clean up from preparation after the measurement and before combining ingredients. The cleanup time needed after cooking will be decreased, too.
It appears that such standards already exist.

All the serious pizza nerds are using weight-based recipes for making dough. I think most bakers are doing the same.
You already can do this.
In the dairy section, there are little cartons of separated yolks and whites. In specialty, usually commercial, bakery supply companies, both are available in dried form.
I get about 1/2 my eggs from neighbors who raise chickens. Everyone’s eggs are different sizes. However, the farm eggs have thicker whites and larger, firmer yolks.
I have noticed no difference in using whichever eggs for any recipe. The difference is only noicable when eating the eggs qua eggs.

What if a 500g sack of eggs equates to 4 and a half eggs...gonna get real messy, real quick.
My mother and my mother-in-law (both farm-raised) probably never even heard of a gram. Mother-in-law actually uses an ancient measuring cup with numbers that are practically unreadable.
And, I’d put either one of these ladies up against any chef you could name.

A gallon of gasoline weighs different than a gallon of milk or water. Same for a gallon of oil, etc.
Density is the difference, & the rules of a legislature cannot change the rules of physics.
To the best of my knowledge, they are sized by diameter, etc.
