That's the way my paternal grandmother cooked. Grew up on a plantation in Barbour County and in town in Eufaula, AL.

My maternal grandmother was another matter. She was a white-gloves-and-pearls sort of person, from Augusta GA but she learned to cook from her German housekeeper while she and her husband were living in Pittsburgh (he worked for Westinghouse Electric his entire working life). So that side of the family is much more Pennsylvania Dutch in its cooking, even though it's all Augusta, Charleston & Upstate SC in blood.
