From Wikipedia: Paella is a rice dish, originally from Valencia (Spain) where it is traditionally eaten on Sundays.
The name paella is the word for "frying pan" in Valencian (from Latin patella). However, the dish has become so popular in Spain that the word paellera is now usually used for the pan and paella almost exclusively for the dish. In the Valencian area, nevertheless, the name paella is commonly used for both the pan and the dish.
Paella is usually garnished with vegetables and meat or seafood. The three main ingredients are rice, saffron, and olive oil.
Paella is generally cooked in a paella pan, which is a large, shallow, flat pan. First the meat, and then the vegetables are stir fried in olive oil; subsequently water is added and brought to a boil, and left it boiling for half an hour or so. Later, after checking the obtained broth flavor and adding salt if required, the rice is added. Real paella rice is never stir-fried in oil, as pilaf. Once the rice is nearly done, the paella is removed from the heat and left to absorb the remaining water. Traditional paella has a crispy, caramelized, toasted bottom (called socarrat in Valencian) that is considered a delicacy. To achieve a socarrat, one needs only to turn up the heat to high and listen to the bottom of the rice toast. Once the aroma of toasted rice comes from the pan, the heat is removed once again. The paella is ready to be served after having cooled for several minutes.

There is no one right way to make paella. It is as varied and tasty as chili.
FWIW Paella is traditionally a festival dish made in very large batches. It is not a common home dish.

I’ve been listening to Hannity for years. He’s getting more muscular as a conservative. This is good. All that exposure to Colmes only boosted his immunities.

I’m have allergies to Wikipedia, and I also had cod the other day, the house smelled like cat wee when I returned from work, any other fish similar to cod, in that it don’t have an strong taste? I can get over the cooking smell.
