Home made pasta is easy to make and much better than boxed. It can also be made in large batches and frozen. I’m also a big soup and stew person. It’s very cheap to make and goes a very long way. What we don’t eat up I put into canning jars and freeze making sure to leave space for expansion. I also make most of ur breads. If you have a stand mixer it is easy to do and costs next to nothing compared to $2 or more at the store. I’ve in the past year made my own sourdough starte so no longer even need to buy yeast. :)

I like home-made pasta a lot. Ex got my pasta machine, and for fettuccine, angel hair, spaghetti, bowtie or that kind of pasta, I'll go ahead and buy dried, its just so cheap. Definitely make my own sauce, but unless I'm making raviolis or something special, I don't bother with hand crafted anymore for pasta.

My Mom’s Recipe for Monicotte:

Shells:
1 Cup Flour
1 Cup Milk
3 Eggs

Blend until smooth.

use non stick 9 inch pan and cook 1/4 cup batter over medium heat, turning once.

Filling:
16 Oz part skim ricotta
1/4 Brick Part Skim Mozzarella shredded
1/4 cup Grated Parmasean
1 Egg
S+P
Parsley

Optional:
cooked, drained, Chopped Spinach
Cubed cooked Ham

Mix well.

In the center of each shell add 2 spoon fuls of filling. roll into tube ( makes about 12)
Add Marinara sauce about 1 inch deep to Pyrex Baking Dish
Add Rolled Monicotte and top with
more sauce if desired

Bake at 350 for 30 minutes.
