"An Iranian Red Crescent vessel laden with humanitarian supplies was due to set sail for the Gaza Strip over the weekend, AFP reported, quoting the Islamic Republic's state broadcaster. Red Crescent director Ahmad Navvab was quoted as saying, "Despite the Zionist regime's opposition... this consignment will leave Bandar Abbas for Palestine on Saturday and will arrive in 12 days." He said that the ship contains "over 2,000 tons of food, medicine and appliances," as well as Iranian doctors and aid workers."

I heartily suggest that the Israelis very thoroughly check this ship for radiological or other contraband, while it is still very far at sea. And if it is found to be carrying any contraband, including military or paramilitary personnel, or known spies, at Israeli discretion, they could be turned over to a responsible third party, for inspection and return to Iran.
But if the cargo was of a military, radiological, chemical or biological nature, and deemed to be hazardous, it and the ship could be disposed at sea. Any written or digital information would likewise be subject to inspection.

If there are military persons or material on board, Israel should arrest them as leverage.

Sounds like a pair of Harpoons fired from an F-15 would do the job. Make sure to have a C-130 orbiting nearby with cameras rolling, to record secondary, tertiary, and all other explosions. Secondary where fuel would be kept is fine. A secondary at the bow would signal explosives.
