why didn’t they just pull something off in Britain? Why travel all the way to India? To hurt foreign investment (primarily US) and western tourism in India.

You forget that barely a dozen foreigners (including Japs, Canadians and Koreans) were killed, the rest of the 150 odd are Indians? Or, don't those people matter?
The terrorists came to kill as many non-Muslims as they could get -- Jews, Christians, Hindus, all the same to these islamics
