Come on, now, Bob. The dietary restrictions in the Old Testament were intended to separate the Jews from the Gentiles. God called on them to show that they were different. The same goes for circumcision.

Take a good look at the book of Acts, and Paul’s letters. They are rife with criticism of Jews who attempted to convince Christians that they should continue the restrictions of the Jews given in the Old Testament.

Let everyone be convinced in their own mind what is right. I certainly am not going to engage in a fruitless argument that will will not change anyones mind. God has always wanted His people to be different and challenged to be better than what our natural desires are. Jesus, our Savior and Example, did not sin and the more closely we emulate His life, the closer to God we will be. You can read Pauls letters however you want, but the context and meaning we will probably disagree upon. Cheers.
