Parading with the head may possibly have been seen by her as additional punishment; ie disgracing his family members publicly. I'm not defending her action, just trying to understand what was in her mind.

But what's up with your belief that beheading was too extreme? She's in a field, working with a scythe, and the same guy who has been disgusting and terrorizing her for months tries to take her from the rear. A fight ensues. What should she have done, stabbed him in the foot as a warning?

If death is the obvious recourse, one swift blow was probably more merciful than stabbing him ineffectually or running him through and waiting for him to bleed out.
