Apparently he first stabbed the man multiple times, initially it was numbered as around 50 times. He then proceeded to gut the victim. After he finished the gutting he then severed the victim's head.

I understand that he stabbed the guy, and while everyone was running from the psycho with the knife, he decapitated the young man before some of the passengers got back on the bus to confront him. He came running at these passengers, with the knife, and the head, and then returned to mutilate the body after being locked in the bus.
