What the recipe, actually it is very simple to make.

I do make the sponge at the bottom but a bought plain sponge cake would do. Soak in sherry, make up a couple of pints of jelly (jello) with tinned or fresh fruit in it. When nearly set pour over the sponge. Add topping which can be anything from made from scratch egg custard (pouring type not baked type) or bought custard such as Bird’s or Ambrossia. Alternative an instant whip type pudding which you just add milk to and whisk which is dad’s favourite and I used that on this trifle. I used bananna flavour which again is dad’s favourite. Then I topped it with fresh raspberries.

If you want to be for a special ocassion you can also put a layer of whipped double (heavy) cream on top and then decorate with fresh or glace fruit of your choice. If you cannot get suitable fresh fruit glace cherries make a good topping.
