I usually got around it by photocopying a homework packet for the month of December and handing it out early in December and saying that it was due on January 3rd (because no one ever remembers to bring it in on January 2nd), so that they can pace themselves and get it done whenver.

Also, I mention that it's 20 homework assignments worth 5 points each, totally a 100% project. If I give a "real" assignment, it'll be for extra credit, makeup (the semester's almost over) or at least "fun" -- basically, in some way, optional. Some of my kids won't even be in the country that week! They'll be in the Carribean or elsewhere

You are a good teacher. I wish I had gotten smart teachers
like you when I was in school. I think mine enjoyed giving
the assignments! LOL!
