Uhu is a big reef fish that's usually stuffed and cooked on a grill. Sashimi is sliced raw fish, usually Ahi or Aku (Tuna) but sometimes whatevah da catch.
Poke is a Pupu or appetizer of raw fish or cooked squid (octopus) with limu and seasonings.
On the east coast we had clams and oysters, we enjoyed pickled eel and herring and calamare. So there's really little difference in the menu choices other than the methods of preparation and their names.
