I have a hard time keeping up, admittedly. Wasn’t olive oil (I believe a Polyunsat) supposed to be a miracle circa 1995?
Olive Oil is a monounsaturated fat, and is healthy, but you can’t cook with it at high temps. It evaporates.
The much demonized coconut oil is a good alternative, just stay away from the hydrogenized and the partially hydrogenized as there is no need to detoxify it like many of the seed oils out there, that were formerly used as paint binders.
