I have tried a couple of recipes for pumpkin since I discovered how to cook pumpkin for pies and cakes last year and this is my favourite one.

I normally use butter icing (cream) though for the topping as I do not often have cream cheese in the house. I also the icing you use for the red velvet cake would be good for this cake.

I checked out the recipe - it’s much like one I’ve used for years (but not lately), called Clifton’s Pumpkin Cake and the Cream Cheese Icing.

My recipe must be for a larger cake - more of everything.

I pulled the recipe out of my little tin box I’ve had for a hunnert years. You know, somethings just taste too good to make them. I’d eat it all.

I always thought the cream cheese icing made it yummy.
