Tigers breed very easily in captivity. Why would you go to the expense, wait, danger and inconvenience of hunting, preserving and shipping a tiger, when you could have one right next to your facilities ready for processing?

“Wild-caught tiger” has a certain cachet, perhaps. The upscale establishments might prefer it.

Sure, but how are they going to know once it's served up in a stir-fry or bowl of soup? "Wild tiger" (like wild salmon, apparently) would have a slightly different taste? Well, heck, through the miracle of modern chemistry...
