I think carnivore offset is closer to carbon offset.

And it applies to all meat, fish, fowl and other yummy critters.

Yep. I'm sure I'm not, but I'm the only person that I've heard of who does this. It's pretty good, IMO. Of course, feel free to tweak away.

In sanctioned cookoffs beans of any sort are prohibited.

Will Algore give up gourmet cuisine? I wouldn't hold my breath waiting for him to make haiji to PETA. After all, its that meat that accounts for his girth.

Bison is like moo-cow that ate it's veggies as a kid and didn't scoop them on the floor for the dog. :-) It's a dark red flesh, and has a somewhat more gamey (but not overpowering) smell when it's first heated, but as it cooks and the aroma fills the room, you rise up out of your chair and bellow, "Now, THAT is meat fit for a Klingon!" LOL

You may already be familiar with Brunswick Stew but I wasn't until I spent a few years in the Carolinas.

(While there I assumed the screen name of Ray Earl Hands. On my home page I listed a Moon Pies and RC Cola as my favorite food.

During Rush's first couple of years he had the hickory house waitress' "hah yoooo" greeting down pat, lol.)

Brunswick Stew is very good and like chili has a richness of history, flavor, variety, and obsessive, opinionated fans.

I've never tried my hand, too many ingredients and too much process for my brute force (yet still subtle and succulent) approach.

I detect from your recipes a patient, nuanced (not in the Kerry sense), and refined commitment to your cookery.

Have a look, it just might be up your alley.
