Get the paper towel ready, then wash your hands, leave the water running, dry your hands, then use the paper towel to shut off the water.
I do that unless the faucet is an automatic one; I like those! Then I just hang onto the paper towel and use that to open the outer door. If the trash can is right by that door, I toss it on the way out!
