Here is what is sometimes called "Old Fashioned Cream Pie," a Northern Indiana Amish specialty and delicious at holiday meals:

Amish Sugar Pie

Ingredients 1 unbaked 8 pie shell 1 cup brown sugar 3 tablespoons flour 1/4 teaspoon salt 1 1/2 cups evaporated milk 3 tablespoons butter Pinch of Cinnamon to taste

Preheat oven to 350F. In a small bowl blend together the sugar, flour and salt. Spread in bottom of pie shell. Pour the milk over the sugar mixture, but do not stir. Dot with the butter and sprinkle cinnamon over all. Bake for 50-60 minutes, or until filling bubbles in center. This will not be a firm custard, so don't despair if it doesn't look like the custard pies you are accustomed to! Pie is best served at room temperature.

Oh, that sounds so good - I have to try it. It also reminded of a recipe I meant to post a few days ago and now it's a little too late.

It was for Amish "Friendship Bread," just about the only bread I really like. It's the one that you make a starter out of instant potato flakes for, then use a cup and give a cup to a friend with the loaf you have baked, so they can make their own.

Haven't done it in a long time, but love the bread. Too bad it takes 3-4 days for the first starter to be ready - I was thinking someone new to it could've made some bread for tomorrow (it's fabulous for stuffing) and given some starter to a guest or two. *oh well*

That sounds mighty good Varina! I'll print it and try it, thanks! Very simple, like water pie.

Aunt Edna's Water Pie

No measurements are really necessary.
Mix equal amounts of flour and sugar
Place in unbaked pie crust
Add just enough water to cover the flour/sugar mix
Sprinkle liberally with cinnamon
Place about 5 pats of butter on top, evenly spaced
Bake in oven set at 350 until done

It really is good!
