Anthrax would take time even if ingested in large quantities. Gastrointestinal is like the stomach flu. Most people who die from this are people who eat goats and sheep that they found dead and ate anyway.

Don't know if anyone answered you, yet...but based upon the book "Demon in the Freezer" (Richard Preston) which chronicled the US cases of the weaponized anthrax attacks during 2001, the description of their symptoms and autopsies are totally different.
They had high fever and severe flu symptoms that rapidly progressed over a period of hours.
