I like salmon or steelhead trout. Halibut can be tough, as can swordfish, and cod isn't really available here. I avoid perch and flounder, unless it's stuffed with crabmeat.

Lake perch is one of the most tasty meals I can think of. Even better if you eat them right after you catch themselves.
