Thats another thing I have noticed about American recipes you tend to use oil rather than butter or margarine

That change was introduced by our big agribusinesses, in the 1950's and later, if I recall correctly. Prior to then, butter ruled. But plant based oils are cheaper, and once hydrogenated, have a longer shelf life (the damn oils have already been killed, in my view, so can't die any further on the shelf ;).
