If I eat "healthy" I put on fat and lose muscle mass. The more rice, beans, pasta, tofu and vegetables I eat, the more the effect takes place.

If I eat Atkins, all that fatty red meat, cheese, and eggs stuff, I lose weight and my workouts will put back on muscle mass (both blood pressure and cholesterol go down as well). Part of the issue here is that people need to learn how their body reacts to different types of food. But people are not trained to listen to their body.

Atkins or Zone diets work for me, but only if I keep my max daily calories between 1200 and 1500 AND burn around 300 extra calories per day on a treadmill. I augment that will 30 minutes of hard weight lifting 3 times a week to hold muscle mass. If I do any less, my body maintains my current weight. No up or down. One certain way to sabotage the whole effort is to include beer in the calorie count. A reduction in daily exercise and one 12 oz beer at dinner was enough to plant 25 lbs back on my hide. No change in overall daily calorie intake.

That's because these aren't healthy foods - especially the tofu. Why don't most folks understand that those sharp pointy teeth aren't for chewing rabbit food? They're for ripping and tearing flesh.
